Homemade Ricotta Pancakes Recipe

Homemade ricotta pancakes are delicious and easy to make and it doesn't take a lot of time to cook them. To prepare some tasty pancakes you will need few cheap and easy to get ingredients which you already have in your kitchen and if not you can easily get them in the nearest grocery store.

To make ricotta pancakes you will also need some ricotta of course. Thanks to this magic ingredient, pancakes become lighter and the batter starts to bubble when you add ricotta it to it. Homemade ricotta pancakes are especially good for breakfast, but they can be also served as a snack or for lunch and dinner. It is up to you which topping you choose to garnish them. I usually top them with some lemon and confectioners' sugar. Here is the recipe for tasty ricotta pancakes:

Ingredients:
- 3/4 cup milk
- 1 cup ricotta cheese
- 3/4 cup flour
- 3 eggs (separate egg yolks from egg whites)
- ½ teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1 1/2 tablespoons sugar


How to make ricotta pancakes:
  1. At the beginning it is good to prepare ricotta: set ricotta in a fine mesh strainer about 25 minutes before you start making the batter, to drain off excess liquid.

  2. In one bowl, mix flour, salt, sugar and baking powder.
  3. In a separate bowl, whisk egg yolks, milk, vanilla extract and ricotta.

  4. Pour wet ingredients into the dry ingredients and whisk until combined. Remember that to whisk the batter it is good to use spoon or just fork. Do not use electric mixer and do not over mix the batter.

  5. You can use electric mixer only to beat the egg whites until the white peaks form.

  6. Fold egg whites to the batter and mix gently.

  7. Heat a frying pan or a griddle over medium-high heat and brush it with few drops of oil.

  8. When frying pan or griddle is hot enough, pour about ¼ cup of the batter on the surface of the frying pan.

  9. Cook pancakes on one side for about 2-3 minutes or until golden brown.

  10. Flip pancakes and cook again for about 1-2 minutes or until golden brown.

  11. Serve pancakes warm and with desired topping.
