1 cup of crushed almond meal

Heat the oven to 375 F. Mix the margarine, erythritol and almond meal together in a bowl and push into the base of a medium sized springform pan, roughly 8" deep. If ever you do not have a springform pan, then you might also consider utilizing a deep pan but covered with parchment paper and afterward greased with low fat margarine. Having said that, this tends to make it difficult to remove the cake, so consider acquiring a proper pan if possible. Bake this for about 10 mins until it begins to brown.

In a bowl, blend the cream cheese and whip until it is fluffy. Add the eggs, juice, vanilla and sour cream and keep working to mix for an additional 2 mins. Pour the mix into the pan onto the crust.

Turn up the heat in the oven to 400 F. Wrap the pan in foil, and set on top of an additional flat pan to collect any spills. Put this into the oven. Remove the foil, and stick into the fridge to cool down until the next day.
