Tuning lubricant is great for putting on new strings as you replace them. It stops them from breaking when you are putting them on and you could carry some kind of string cleaner like Fast Fret which does prolong the useful life of a string and stops rust setting in.

Allen Keys in different (but relevant) sizes if your multi-tool does not have them are useful. They are especially great for anything round the pick-up region.

In order to get the guitar restrung in double fast time and you've provided the roadie the evening off look at getting a battery driven guitar string winder. Be sure to have the extra batteries for this however, or else it'll be quite pointless.
