Shake Up Dinnertime with a New Meatloaf Recipe

Meatloaf is probably one of the most secretly indulged-upon comfort foods in America. Admit it! Many of us aren't opposed to having a thick slice of meatloaf with mash and green beans—so long as our pals aren't around to witness! But in all seriousness, meatloaf has been a household favorite since the 1950's, and will likely be around for many years to come. This article has three great recipes to show you just how versatile meatloaf can be, thus giving you three more ways to indulge in your guilty pleasure. I hope you enjoy them!

Meatloaf with Ketchup Glaze

2 lbs ground beef
1/4 cup chopped onion
3 slices bread, broken up into small pieces
1 tsp beef bouillon granules
1 egg, beaten
1/3 cup brown sugar
1 tsp mustard powder
1/2 cup ketchup
1/4 cup lemon juice, divided up

To prepare the glaze, combine the brown sugar, mustard powder, ketchup, and 1 tbsp lemon juice. Mix well. In a separate bowl, mix together the beef, onion, bread, bouillon, egg, 1/3 of the ketchup mixture, and the remaining lemon juice. Mix together well (I find it best just to use my hands), and place in a 5 x 9 inch loaf pan. Bake at 350 degrees F for about an hour, taking care to drain any fat. After 1 hour, coat with the rest of the ketchup mixture and bake for another 10 minutes.


Southern Style Meatloaf

1 lb ground beef
1/4 cup grated Parmesan cheese
1 1/2 cups medium salsa
1/4 cup shredded Monterey Jack cheese
1 cup crushed saltine crackers
1 egg

In a large bowl, mix the ground beef, Parmesan and Monterey Jack cheeses, salsa, egg, and crushed crackers. Shape the meatloaf mixture into a loaf form, and place in a greased 5 x 9 inch loaf pan. Bake at 350 degrees F for about an hour, or until the meat has browned all the way through.

Savory Meatloaf

1 1/2 lbs ground beef
3/4 cup shredded Cheddar cheese
1/2 cup crushed buttery round crackers
1 (1 oz) pkg dry onion soup mix
1/4 cup ketchup
2 eggs, beaten
2 tablespoons steak sauce

In a large bowl, mix together the ground beef, Cheddar cheese, crushed crackers, and onion soup mix. In a separate bowl, whisk together the eggs, steak sauce, and ketchup. Pour the egg mixture into the meat mixture and blend until moist. If the meat is on the dry side, add a little water. Place into a greased 5 x 9 inch loaf pan and bake at 350 degrees F for about an hour, or until the meat has browned all the way through.
