Cold Avocado Soup. Puerto Rico's Speciality

There is no doubt that all travelers look forward to trying something novel in any place they visit. A specialty in the Puerto Rico area fits the bill perfectly and is to die for!

The Cold Avocado Soup represents the quiet life lived in Puerto Rico, and is reasonably basic to knock together, just get the list of ingredients below, and follow the instructions and you will soon be eating the best soup you can make.

First you'll need plenty of ingredients, including the following:

1 medium chopped onion
2 cloves garlic minced
1 tablespoon ground coriander
1 teaspoon ground cumin
4 teaspoon of olive oil
4 small ripe avocados peeled and chopped
2 quarts chicken stock
½ cup of green bell peppers chopped
salt pepper to taste
camarones picadillos
Pico de gallo with dice shrimp cilantro leaves
2 large ripe tomatoes chopped

Cook the onion, garlic and green peppers, in the olive oil until they are boiled through, and soft.
Next, add the chicken stock and also, add the avocados seasoning, then gently bring to the boil.

Once you've completed the previous step, reduce the heat slight and allow to cook through for at least 15 minutes, then leave to cool off, to room temperature.

Once this step is complete, set your blender up and make sure the soup is pure and thick by blending to perfection, until you get a nice creamy green soup with a texture.

Personally, I like to serve this dish chilled, with a light garnish on top, and maybe some camarones picadillos for good measure, although you can serve it another way if you so wish.
